Our
Story

Christmas at Chelsea

There has been a butcher shop at 433 Nepean Hwy, Chelsea since before colour photography, and when we took over in 2020 we knew we had an important role to honour that history and provide our local community with premium, ethical, and sustainably sourced meats and smallgoods.

As third generation farmers from South Gippsland, we are in a unique position to be able to put our own grass fed Glen Alvie Angus beef in the window, alongside free range chicken, lamb and pork from Victoria's best producers.

Our focus has always been on animal health and genetics, we have a robust and consistent pasture improvement program that includes the use of climate-appropriate grasses, seasonal fertilisation, and rotational grazing, that means our cattle have fresh and nutritious pastures that vary depending on the animal's growth stage and nutritional needs.

Unlike some grass-fed operations, our cattle are not

'finished' in feedlots on grain based diets that are incompatible with their digestive systems. They live their entire lives on pasture. Not only is this better for the animals, it reduces the stress-based pH changes that can negatively affect meat quality.

This focus on animal health, as well as the incorporation of genetics from Australia's top Angus studs, including Banquet and Rennylea Angus, is the difference you taste in our beef and the reason people keep coming back to Chelsea Meats.

Chelsea Meats looks very different now than it would have back in the ..., but we try to keep that old fashioned personalised service alive for our community.

No request is too big or small, from ordering in lamb brains to advice about how to cook Boston Butt. We're not your grandfathers butcher shop, but he'd still be impressed by the service.
